La Table d’Uzès, Uzès
Having worked at La Table de Cala Rossa (Porto-Vecchio), Le Chabichou (Courchevel) and La Chapelle (London), Aurélien Constant has just joined La Table d’Uzès, one star in the Michelin guide. In a house with three centuries of history, the young sommelier trained at the Saint-Chély-d’Apcher high school will have the delicate mission of choosing the wines that will marry the southern cuisine of chef Christophe Ducros, a cuisine whose smells are also those of his childhood. For us, he gives us a selection of Costières de Nîmes for this fall.
