Nîmes-Montpellier-Nîmes
Having completed his baccalaureate, this native of Nîmes exiled himself for a time to Montpellier to follow courses at the School of Fine Arts. But this gourmand quickly returned home to join the very first class of the European management diploma from the Vatel Institute in Nîmes, the largest of the Vatel group schools in Europe.
Toronto-Londres-Genève-Nîmes
Once graduated, Georges Weill travels to the kitchens of Toronto, London and Geneva before ending his journey with a stopover in Greece. Back in Nîmes, he joined the Chapon Fin brigade, a local culinary institution opened in 1936.
Paris-Lyon-Nîmes
A quick stopover to Paris and then a prolonged improvement in the oldest typical Lyon restaurant later, he returned to Nîmes, in 2004, for the opening of La Marmite. To simplify, here are all the good things that the Fooding Guide says:
“Facing Les Halles market, in his canteen with its sober “returning from the feria” decor, Georges Weill “remains flexible”, as the people of Nîmes say. Understand: calm on the prices, immutably stuck on €13 for the starter-main course-dessert trinity at lunch time, no frill dishes, but gourmet, pampered meals depending on the mood and the owner’s Lyon roots. Today: voluptuous pélardon mousse, then black rice risotto with mussels and scallops (in season), Grandma’s style mirabelle plum tart.”
