As an aperitif
The 2013 vintage “B” from Mas Mellet, a young winemaker who has recently been producing a white wine with beautiful freshness, with accents of white fruits and citrus fruits.
With foie gras
The white “JT” vintage from Château de Nages, a gastronomic wine whose richness blends with sufficient fat to maintain that of the foie gras.
With a salmon
The “Cimels” vintage from Château d’Or et de Gueules, a refreshing white wine whose minerality can only enhance the iodized and smoky character of fresh salmon.
With a turkey and chestnuts
The “Numa” vintage from Château Guiot. Its elegance as well as its fruitiness will wonderfully accompany the finesse of the meat. And the moderate woodiness should keep the chestnut stuffing going.
With a pélardon
The “Les Perrottes” vintage from Domaine de Poulvarel: its Rhone Grenache-Syrah style and the power of the wine will inevitably enhance the creaminess of the cheese as well as its farm character.
With a Yule Log (bûche de Noël)
The “Excellence” vintage from Mas des Bressades, in white. The presence of viognier guarantees exotic aromas for a perfect pairing.
And with a fougasse from Aigues-Mortes, formerly served with the thirteen Christmas desserts
The vintage “Les Grimaudes” by Marc Kreydenweiss, in rosé. The spirit of the estate, which works without sulfur, ensures real freshness but also digestibility. It’s a good compromise to finish the meal.
