Did you know? The south of the Rhône Valley provides 80% of truffle production in France. Collected during the winter months, they then end up on our most creative tables, such as at Skab, which is one of the starred addresses in Nîmes.
Chef Damien Sanchez offers a 100% truffle menu every winter, so we asked Alban Barbette, the establishment’s sommelier, to suggest the pairings that go well for a totally Costières de Nîmes meal based on the 2016 menu.
