Organic farming constitutes a mode of production which uses agricultural and livestock practices, concerned with respecting natural balances. These products are subject to strict regulatory requirements and frequent inspections.

Master Winegrowers since 1929
The Gallargues le Montueux cooperative cellar was created in 1929. In 1938, it had 400 cooperators who produced 63,600 hectoliters of wine on 800 hectares.
In 1942, in Gallargues le Montueux, as in other Languedoc villages, vines were cultivated as at the beginning of the century. At that time, there was only one tractor in the village. After the war, motorization evolved slowly. Viticulture was still in a period of high production.
In 1962, 453 cooperators produced 84,000 hectolitres on 750 hectares. But little by little, at the rate of the crises, the number of cooperators will decrease in favour of a concentration of the farms. In 1981, there were only 300 left.
