Gallician Signature
With his arrival in 2015 at the head of the cooperative cellar, a wind of youth is blowing through Vauvert! And a wind from elsewhere, since Estelle Quiles does not come from a great wine lineage! She became interested in wine herself to the point of becoming a true enthusiast and a true expert.
Her background: training in agronomy in Bordeaux followed by a master’s degree in business management before becoming, at just 32 years old, the new director of Gallician Signature, one of the beautiful cooperatives of the AOC Costières de Nîmes.
In this position, she enjoys it, particularly through the collective ambition: 90 cooperators striving to move forward together by bringing the same production tool to life. “My job is to ensure a working environment that can meet everyone’s expectations while maintaining a form of conviviality,” she summarizes.
She also brings her own ideas to the cooperative. New vintages thus appeared, bearing evocative names such as L’Égerie or La Muse. It also relies heavily on the attractive Camargue identity, which affects consumers looking for authenticity and in which winegrowers also find themselves.
Her favorite vintages
Cuvée Terres des Launes (red) : a powerful nose with aromas of fruit with alcohol and spices, balsamic notes on the palate.
Food pairing: duck with figs
Cuvée L’Égérie (rosé) : notes of ripe fruit and citrus.
Food pairing: pan-fried prawns with garlic
Cuvée La Muse (white) : a floral nose with honeyed and quince notes.
Food pairing: Provencal-style red mullet fillets
